Spinach Soufflé

Ingredients:

1 tbsp butter

4 eggs (whites and yolk divided)

2 tbsp shredded goat cheese or parmesan cheese

8 oz fresh spinach leaves

Pinks salt and black pepper

Nutmeg

10 fresh basil leaves

Instructions:

1.Preheat the oven to 400°F. Grease 6 soufflé molds or 1 baking mold.

2.In a clean bowl whisk egg whites until stiff peaks form. Set aside

3.In a food processor or in a cutting board, cut fresh spinach

4.Align a frying pan and heat the butter. Add fresh spinach, a pinch of salt, pepper and nutmeg. Cook on low heat for 5 minutes. Separate in a clean bowl and add shredded cheese and the 4 remaining egg yolks.

5.Pour egg whites and fold in gently

6.Fill prepared ramekins up to 1 cm from top. Place on a baking tray and bake for 20 minutes (200°C) until risen and browned. Serve immediately.
