Beef Stroganoff

Ingredients:
14 oz beef filet steak cut into cubes or strips
1 onion sliced
14 oz mushrooms sliced (you can mix different varieties)
½ cup white wine
1 tbsp tomato paste
1 ½ cup of meat stock or vegetable stock (ideal if it is home made and with not much salt) 1 tbsp paprika
Pink salt and black pepper
1 tbsp dijon mustard
2 tbsp cream (optional!)
Olive oil
Instructions:
1.Sauté the steak: Add 2 tablespoons of olive oil in a large sauté pan over medium-high heat. Add the steak in a single layer, seasoned with some pinches of salt and pepper, and let it for 2 minutes to get a good sear. Flip the steak, and cook on the other side until browned. Set steak aside.
2.Heat the sauté pan with a little bit of olive oil and add the onion and cook until soft for 2-3 min approx. Add mushrooms and sauté for 5 more minutes. Add a pinch of salt and pepper. Cook until both are soft.
3.Add the white wine and let it cook down for 3 minutes.
4.Add tomato paste, stock, paprika, mustard and additional salt and pepper if needed. Cook for 5 minutes.
5.Before serving add cream and heat for 2 minutes
