Zucchini Carpaccio

cucumber

Ingredients:

3 zucchinis

Fresh thyme

Fresh mint

2 tbsp olive oil

Zest and juice of 1 lemon

Pecorino Flakes (just a little to garnish)

Pink salt and black pepper

Instructions:

1.Slice the zucchini very very thin.

2.Align them in a large plate and season with salt and pepper

3.Add the fresh thyme and mint over the zucchinis and drizzle the olive oil, zest and lemon juice.

4.Garnish with a few pecorino flakes and black pepper

Pairing Recommendation: Great served with chicken
