Chicken Garam Masala

Ingredients:
2 tbsp Garam masala spice mix (You can make your own by combining peppercorns, coriander seeds, cumin seeds, nutmeg, cloves, cardamom, cinnamon etc)
½ tbps Paprika
A pinch of Nutmeg
15 oz crushed tomatoes, canned or fresh tomatoes
1 tbsp full fat cream
½ tbps butter
4-5 oz chicken breasts cut in cubes
Pink salt and black pepper
Instructions:
1.Heat the pan where you will cook both the sauce and chicken. Add olive oil. Once hot, seal the chicken and season with salt and pepper. Set chicken aside. (don't over cook!)
2.Cook spices. Heat the pan with butter and add the spices. Cook for 30 seconds and add the tomatoes. Let the tomatoes cook and infuse with the spices.
3.Add the chicken and cover until the chicken is fully cooked, approx. 15 minutes.
4.Before serving add the cream.
Pairing recommendation: Serve with sautéed vegetables.
