Recipe: Mexican Chicken Soup

Ready for an easy, delicious and healthy meal?

INGREDIENTS:
2-3 Chicken Breast
1 Garlic Clove
2 TBSP of Butter
2 15-ounce cans of stewed tomatoes
1 cup of salsa
1/2 cup of cilantro
1 TBSP or more of ground cumin
8 ounces of Monterey Jack cheese, cubed
Sour Cream

DIRECTIONS:
1. Cook and shred chicken
2. Add minced garlic to butter and saute
3. Add all ingredients except sour cream and cheese and simmer
4. Cover. Simmer for at least one hour
5. Divide cubed cheese into 6 bowls and ladle ssoup over cheese

As we get ready to change from winter to spring, I wonder what is the first thing you notice?

The initial signs of spring may be subtle. The sunrise is a little earlier and climbs a little higher into the sky. But then I look to the tree line.
